Mixed veg paratha, healthy and tasty paratha recipe with step by step pictures! Perfect way to make kids eat rainbow of vegetables.

I always wanted to try this mixed vegetable paratha and when I saw my sis in law’s post - How to make square parathas, I was way too tempted.

So I tried to make parathas with stuffing to suit my kids taste, with spices and his favourite mixed veggies. He loved it a lot and hereafter he wants ‘only’ square parathas!

Stepwise photos

Stuffing

1. Take peeled, cubed potato with a tablespoon of water in one vessel and other veggies with a tablespoon of water in another vessel.

2. Pressure cook for 3 whistles in medium flame (pot in pot method)

3. Once done, drain the water immediately in the potato and mash it along with peas.

4. Also drain water from peas, carrot,beans, if any left in the vessel.

5. Heat a pan with oil and temper with cumin seeds.

6. Add onion and fry till soft. After that, add ginger garlic paste and fry for a minute in low heat.

7. Add tomato and fry for a minute, followed by carrot beans, potato, peas.

8. After that, add turmeric, garam masala, red chilli powder, salt and coriander leaves and give it a quick stir in medium flame.

9. Cook until veggies blends and fry in low flame for 2-3 minutes.

10. Cool down and make 6 equal sized balls out of the mixed veg paratha stuffing.

Dough

  1. Make a soft and pliable dough,as we do for roti and keep covered.
  2. Make six equal sized balls from the dough as well.

Make paratha

1. First roll a ball of dough as we do for roti and keep the stuffing in the centre.

2. Fold from the left first and then from right as shown in the below picture.

Then fold from above and then below to for a square packet.

3. Dust the pack generously with maida and roll into square paratha.

While rolling the paratha will tend to turn round shaped, but try to maintain the shape by rolling only in the corners in between to retain the shape.

Heat tawa and drizzle oil and toast both sides in medium flame till golden spots appear.

Serve mixed veg paratha with curd/ dahi or any other raita of your choice. Yummy and flavourful.

Ingredients

  • 2 Potato small sized
  • ¼ Frozen or fresh peas
  • ¼ cup Carrot and beans finely chopped
  • 1 Onion Finely chopped
  • 1 Tomato de-seeded & finely chopped
  • 2 tablespoon Coriander leaves chopped
  • ¾ teaspoon Ginger garlic paste
  • teaspoon Turmeric powder
  • ½ teaspoon Garam masala powder
  • ½ teaspoon Red chilli powder
  • Salt
  • 1 tablespoon Oil
  • 1 teaspoon Cumin seeds

For Dough

  • 1 cup Wheat flour Atta, heaped
  • 1 tablespoon Oil
  • Salt
  • Warm water as needed

Instructions

  • Cook until everything blends and fry in low flame for 2-3 minutes.

  • Cool down and make 6 equal sized balls.

Notes

  • Use your choice of vegetable, make sure to drain well the water in the cooked vegetables.
  • You can omit tomato and add lemon juice at the end too.
  • Roll and toast side by side, if you roll and keep, then it will turn sticky.
  • Perfect for lunch box, just wrap then in aluminium foil!

    Hi Harini,
    If the stuffing gets outside when rolling,that means your stuffing is too soft(loose) and the dough is too tight(thick) ... the dough also has to be very soft and pliable. Try adding little more water to the dough and see ...

    Hi Raks,
    I got mesmerized with the orangy pictures of the paratha and tried the recipe last night. It got flopped :(. But then I got where I went wrong. I did not de-seed the tomato. So my masala stuffing went mushy and was not able to roll the paratha. They came out of the paratha while i rolled them. But never mind, i then got a lesson that one should read/listen thoroughly before trying recipes 😀 . Will sure try it until it gets perfect 🙂

    cool !! Yes like the way you did unfold the recipe and its good , usually I like to chop my coriander leaves and also add finely chopped gr chillies !! and mix em into the veg mix at the end and not in fire !! thats because i love the coriander flavor to come out more ... amazing with the carrots n bean n peas next time my parathas will experiment this
