Slow Cooker Tips & Tricks

Let’s just have a little crock pot talk here for a minute…

As most of you know I’m a graduate of the Culinary School and one of the class that’s required is Sanitation and Safety. During this class we had an eye-opening chat about slow cookers and how they can be the perfect breeding ground for bacteria and pathogens.

• If not careful they can be the perfect breeding ground for bacteria and pathogens.

• Preheat your crock pot just like you preheat your oven so plug it in and turn it to the high setting to get it nice and hot from the start for cooking.

• Add everything into the crock pot as warmed up as it can be, to cut down on the getting-the-food-hot portion of cooking, this is where you need to be cautious and make sure it is all hot and up to cooking temperature in 2-3 hours.

• If food stays between 41 degrees and 135 degrees for 4 hours, then it has to be thrown out because the bacteria and pathogens have had much too much time to grow and a food borne illness is a likely result.

• If you add meat make sure it is thawed and NEVER frozen, if it’s beef or pork brown it first.

• Add liquids hot ie: like use HOT water or warm up any liquids in the microwave first then add them in already hot.

Slow Cookers are wonderful things and if we take a couple of quick precautions to keep food safe while using them… they are even better! 🙂

Does chili taste better in the crockpot? ›

Technically, no. The beef, bell pepper, onion, and garlic will all cook in the slow cooker, but browning the meat and sautéing the vegetables in a skillet before adding it to the slow cooker brings much more flavor to the chili. You'll be glad you did—promise!

How can I make my white chicken chili less spicy? ›

Add a generous dollop of sour cream, creme fraiche, or yogurt to scorching hot chili or stews, or even a touch of milk or cream. For best results, though, go with full-fat dairy. For tomato sauces and stews that don't want dairy, try shredding some cheese on top. Photo by Meredith.

Can you use frozen chicken in the crockpot? ›

Information. It is best to thaw meat or poultry before putting it into a slow cooker. Frozen pieces will take longer to reach a safe internal temperature and could possibly result in foodborne illness. Frozen or partially frozen foods can also cool everything else in the slow cooker.

What liquid to add to chili? ›

Chili cooks low and slow, so you need enough liquid to tenderize the meat and keep everything from drying out. That liquid should also add flavor to the chili, so use chicken, beef, or vegetable stock, or beer.

Should chili be thick or soupy? ›

Chili should be thick and hearty enough to be a meal on its own, but sometimes there's just a bit more liquid than you want in the pot. While you can simply keep simmering the chili, that method risks overcooking softer ingredients like the beans, losing all your nice texture to mushy monotony.

What is the secret to really good chili? ›

Only Add Flavorful Liquids

Instead of adding water to your chili, add some more flavor with chicken or beef broth, red wine vinegar, Worcestershire sauce, or even beet or wine. Each one of these options brings out different notes and levels of sweetness that will enhance your culinary creation.

What adds the most flavor to chili? ›

If you want more of a smoky flavor, add cumin, Spanish paprika, ancho chili powder, or a combination. If you are looking for more heat, add cayenne, crushed red pepper, or Hungarian paprika. If it's too spicy add a little brown sugar and some sweet paprika.

How long can you leave chili in a crockpot on low? ›

The tomatoes contain sugar, which caramelizes in the slow cooker, and will eventually burn if it cookes for too long. Anything longer than 10 hours on low is risky.

How do you thicken white chicken chili without cornstarch? ›

Cornmeal: Add a tablespoon of cornmeal or masa harina while stirring continuously. Mashed Beans: Mash a portion of the beans and stir them into the chili to thicken it. Crushed Tortilla Chips: Crushed tortilla chips can also be added as a thickening agent.

How long does white chicken chili last? ›

Generally, leftover chili, whether it's a spicy stew of chili con carne, a simple white bean chicken chili, or even a meatless chili with kidney beans, will last for 3-4 days in the refrigerator.

Should I put honey in my chili? ›

The sweet taste offsets some of the spice. I was reluctant to make this because I thought the combination of cinnamon and honey would be bad but it was outstanding. My family has asked me to make this again but to turn up the heat. Excellent chili recipe.

How long does it take for chicken to cook in the crockpot? ›

Cook on low for 6-8 hours until chicken is tender and cooked through. Remove lid and let chicken cool for 10 minutes or so before shredding (so we don't burn ourselves!) Use two forks to shred the chicken right in the crockpot. The chicken will absorb any liquid in the pot as you shred it.

Can you put frozen chicken in the crockpot for 4 hours? ›

When cooking frozen boneless, skinless chicken breasts in a slow cooker on the high setting, it typically takes around 4 to 6 hours. Slow cookers vary in temperature, so it's essential to use a meat thermometer to ensure that the chicken reaches a safe internal temperature of 165°F (74°C).

How much longer does frozen chicken take in the crockpot? ›

"Sounds hard to believe, but it is possible to put a whole frozen chicken in the crock pot and have dinner in about 7-8 hours.

How much cornstarch to thicken white chicken chili? ›

Make a cornstarch slurry: Mix together 1 tablespoon each of cornstarch and cold water, stirring well to remove any lumps. Then, stir the slurry into your chili and let it simmer for another 10 minutes to fully thicken.

How do you thicken white chili without cornstarch?

What is the best thickener for chili? ›

All-purpose flour and cornstarch are useful for thickening chili, as well as sauces, soups, and stews. However, you'll want to avoid adding these ingredients directly to your recipe, as this will result in clumps. Instead, create a slurry and add it slowly to help the thickener fully incorporate.

What can I add to chili to make it more soupy? ›

Add more water or tomato sauce if it's too thick. Keeping the lid on can keep the steam in resulting in thinner chili. Also, if I cook chili in the crock pot it is usually thinner, as the lid collects the steam rather than it evaporating.
